Rainy Day Pantry Stew

It's that time of the month again when we don't know if it's gonna rain or not. One moment, the sun is high up in the sky roasting everything in its path. The next moment, it's raining hard enough to cause an ankle-high flood along EDSA. We've kind of mastered the art of making whatever is in the pantry and this recipe is a bit like Korean Army Stew but we don't have kimchi at home plus it's kind of hard to call it your own version if you're not from that country and risk being the target of the wrath of a thousand locals cursing you with the death beds of their grandmothers and other ancestors (*looks at Italians*).

For the vegetables, add whatever you have available in the fridge that you like. Cabbage, carrots, potatoes, sayote, squash, string beans, napa cabbage are some of the common stuff one can have lying around. You can also add chick peas, canned beans, canned pork and beans or even lentils. You can also add corned beef, Spam, Maling, vienna sausage, ham, bacon, hotdogs or longganisa.

You can omit the chicken cube if you have chicken, beef, or pork stock lying around. You can also skip the gochujang/chili powder/hot sauce if you don't like it even just remotely spicy.




Pantry Stew

1/2 cup carrots, diced
1/2 cup potatoes, sliced into eights
1/2 cup baguio beans, sliced into 2 inch pieces
4 pcs hotdogs, sliced diagonally
1/2 can spam, cubed
1 tbsp butter
1 tbsp oil
1/2 onion, chopped
2 cloves garlic, minced
1 1/2 tbsp gochujang or hot sauce
1/2 pc chicken cube
2 tbsp soy sauce
3 cups water
2 servings (about 100g) dried noodles
1/4 sliced cheese (optional)



1. Saute the onions and garlic in oil and butter. Add the gochujang and chicken cube and stir until it has melted into the pan.
2. Add the hard vegetables like carrots and potatoes into the pan, then add soy sauce and water/stock to stop the bottom from burning. Simmer for five minutes then add the meats.
3. Taste for seasoning then simmer until the vegetables are soft. Add the remaining vegetables and the dried noodles. Stir in an egg if you like. Simmer again until noodles are cooked. Top with sliced cheese.
