Vegan Budget Meal: Tofu Mushroom Sisig

Usually whenever gagawa akong food, may butter or cheese or milk. I love cheese and butter way too much to let go, miski yung totoong vegetarian sa bahay na ito na yung boyfriend ko.Total cost is less than 100 and can feed up to 4 people, actually pero pwede rin 3 if matakaw. Vegan siya if di lalagyan ng mayo tsaka egg, pero Meatless Monday option pa rin siya kahit may egg.

Ingredients:

1 block (400-500g) tofu, drained and crumbled (P37.00)
1 can (198g) mushrooms, chopped into smaller pieces (P24.00)
1/4 cup Soy Sauce (P2.50)
2 tbsp cooking oil (P2.50)
1 medium-sized (50g) red onion, chopped (P5.00)
2 cloves garlic, minced (2.00)
1 pc finger chili, seeds removed and sliced into smaller pieces (P2.00)
2 pcs calamansi, juiced (P3.00)
salt and pepper to taste

Optional: Butter instead of Cooking Oil, Fried Egg (P6.50)

Cost: P78-P100 for 3-4 servings

1. Prepare your ingredients. Chop what needs to be chopped, crumble what needs to be crumbled, juice whatever needs juicing. Set aside.

2. On a heated pan, saute your garlic and half of the chopped onion in oil. Once the onion is translucent, add your mushrooms.

3. Stir for about a minute before adding the tofu. Mix the pan for another 5-8 minutes.

4. Pour in your soy sauce and calamansi juice to the pan. Evenly distribute the sauce and saute everything once it is dry and has a meaty texture. It takes about 5-8 minutes as well, taking note not to burn the bottom.

5. Add the rest of the onions and the chili. Stir for 2 more minutes, taste for seasoning and mix in more salt (if needed) and pepper. Serve on a plate, sizzling platter or over rice with egg. You may also top it with mayo or cheese.
