De Lata to Pasta: Sardines in Spaghetti


Last Saturday, dumalaw ako sa parents ko sa Cubao para mailakad namin mga doggies nila (HALOO PEDROW AND BEYBANG).




Also, nakakita ako ng ilang lata ng sardinas na mukhang di naman nila kinakain. Nagbaon ako ng isa pauwi and tried to recreate the recipe I made back in college. It's just as good as I remembered it! Struggle meal, yeah!



Ingredients: (Makes 2 servings; approximately P20.00 per serving)



1 155g can of sardines in tomato sauce (P15.00)
1 pc tomato, diced (P3.00)
1/2 small onion, chopped (P2.50)
2 cloves garlic, minced (P2.00)
1 finger chili or 1/2 a bellpepper, deseeded and diced (P2.00)
1 tbsp butter or oil (P5.50)
1 pc bay leaf (P1.00)
1 bunch of parsley (optional)
250g cooked pasta/125g dried pasta (keep 1/4 cup of pasta water) (P7.15)
1/4 tsp salt 
1/4 tsp pepper

Total of P40.00 for all ingredients



1: In a pan, saute onions until translucent. Add tomatoes and saute until soft before including garlic and chili.

2: Add the sardines (without the tomato sauce) and stir for about a minute. Then, pour the tomato sauce, oregano and bayleaf. Simmer for 2-3 minutes

3: Add in half of your chopped parsley and pasta liquid and simmer for another 2-3 minutes.

4: Add your pasta and stir it into the sauce. Or you can pour sauce on top of plated pasta.  Serve with parmesan cheese and more parsley.
